Good Eats: Vegetarian Steamed Dumplings

Wheat bran muffin base
This is the base for a basic wheat bran muffin. I tend to add fruit (blueberries, bananas, cranberries, oranges, apples, pears, raisins) to them, but go crazy!
1 1/3c flour (white or wheat)
1c wheat bran
1/2c sugar
1tsp baking soda
1/8tsp salt
1 1/4c soymilk
1/2c applesauce
2tbsp ground flax seed (optional)
1tsp vanilla extract
1/2c fruit

I plan on starting to bake regularly. In the winter it’s nice because it warms up my house. Plus we should be eating breakfast on a daily basis, so having fresh muffins will be nice. I’m hoping I can coax Mr Lazy Veggie into making a loaf of bread each week, too.

Dinch Alicha (Potato Stew)
3 large onions
3 large carrots
4 potatoes
1/4 cup oil
2 cloves garlic
1/2 tsp ground ginger
1/2 tsp turmeric
1/2 tsp curry powder
1/2 tsp black pepper

A couple of the ingredients below you may have a hard time finding. Raw Banana Ice Cream
2 1/2 frozen bananas
2 tbsps vanilla soymilk (or 2 tbsps plain soymilk with 1tsp of vanilla)
Add ingredients to blender and blend until smooth.
Top with other fruit (I pureed a few strawberries), chocolate chips, coconut flakes, or anything you’d put on ice cream.

Look, Ma! No salad dressing!
We tend to not buy condiments in our house - we don’t use them often enough to warrant the cost and they just end up going bad.
A good way to get the sweet flavor of a lot of dressing is to throw in some sweeter veggies or fruits - my favorites are grapes and strawberries.

Hummus: yes, you can freeze it
I tend to make hummus is big batches because it’s messy to make (or to clean out my food processor, anyhow) and I don’t always have the ingredients on hand/don’t want them to spoil when I do. Depending on what we are in the mood for, the hummus either goes really quickly, or we end up tossing some of it.

Freeze your bananas!
Found bananas on sale cheap but you just can’t eat them quick enough? Freeze ‘em!
Things you can do with frozen bananas:
put them in smoothies
toss a couple in a blender with some vanilla for an ice cream-like treat
use them for making muffins or breads
dethaw and add them to your cereal/oatmeal/granola
