Healthy, protein-packed snacks?
Lately I’ve been looking for ideas on snacks that are easily portable, don’t require refrigeration/heating up and are packed with protein - especially for longer bike rides.
The two main types of snacks we tend to eat that fall into this category are trail mix/granola and baked bars.
For trail mix, we usually throw together a combination of:

What are you favorite freezable meals?
Since I’ll be back to school this week with a heavier case-load than usual, I’ve been working on stocking up the freezer with prepared meals so we can still eat healthy, home-cooked meals without having to do all the prep work. So far I’ve got about 10 or 15 meals (soups, curries, and burrito filling) frozen.

Just made this the other night, reduced the amount of shredded coconut by half and probably could have reduced the sugar by half, too. It was delicious :D

Pasta with Kale and Feta
Sauté over medium heat in a deep skillet:
3 Tbsp. olive oil
2 cups chopped onions
1 large garlic clove minced
Add, cover and cook over low heat for 10 minutes:
1 bunch kale chopped
Meanwhile cook in boiling water until al dente:
1/2 lb short substantial pasta such as penne, shells, fusilli
Add to sauté:
1/4 to 1/2 lb feta cheese, crumbled
Lightly drain...
